Chermoula chicken with asparagus
This diabetes-friendly chicken recipe is recommended by the CSIRO, making it a super healthy meal for the whole family, especially those looking for low-carb meal ideas.
Serves 4
Ingredients
- 600g lean chicken tenderloins, halved diagonally
- 2 tablespoons Moroccan seasoning
- Finely grated zest and juice of 1 lemon
- 2 tablespoons extra virgin olive oil
- 2 spring onions, sliced
- 3 bunches asparagus, trimmed
- 500g mixed baby tomatoes, halved
- 2 tablespoons flat-leaf parsley leaves
- 2 tablespoons coriander leaves
- 500g fresh cauliflower rice (see note)
Method
- Place the chicken, seasoning, lemon zest and juice, oil, spring onion, asparagus and tomato in a bowl. Season with freshly ground black pepper and toss well to combine and coat. Spread out evenly on a large non-stick baking tray.
- Preheat the oven grill to high. Cook the chicken mixture under the grill, turning occasionally, for 10–12 minutes or until cooked and golden. Remove and sprinkle with the parsley and coriander.
- Meanwhile, heat the cauliflower rice according to the packet instructions.
- Divide the cauliflower rice among plates, top with the chicken mixture and serve.
Note: You can find fresh cauliflower rice in the fresh produce section at your local supermarket. If unavailable, use the frozen variety instead.
