Easy mixed berry and pistachio crumble

This warming and delicious berry and nut crumble recipe is a simple and healthy winter dessert that won’t spike your glucose levels.

Juicy berries with a nutty topping are a match made in heaven. Any frozen berries will work in this recipe, and you can swap the pistachios for hazelnuts or almonds. 

Prep time: 10 minutes
Cook time: 25 minutes
Serves: 4

Ingredients

  • 50g plain flour
  • 150g caster sugar
  • 50g unsalted butter
  • 100g shelled pistachios
  • 350g frozen mixed berries
  • Crème fraîche or Greek yoghurt, to serve (optional)

Method

  1. Preheat the oven to 200°C/180°C fan-forced. Place the flour, 100g of the sugar and all the butter in a food processor and blitz until the mixture resembles breadcrumbs.
  2. Add the pistachios and blitz again until the nuts are roughly chopped and the crumble mixture has a light green hue.
  3. Tip the berries into a medium-sized round or square baking dish (you want a snug fit) and toss them with the remaining 50g of sugar.
  4. Sprinkle the crumble mixture on top and bake for 20 to 25 minutes, or until the berries are bubbling and the crumble is golden and crispy. Serve with crème fraîche or Greek yoghurt, if you like.
